Enter the humble yet magnificent Breakfast Buddha Bowl—a culinary creation that encapsulates everything we desire in a morning meal. Packed with a harmonious blend of nutrient-dense ingredients, this wholesome bowl has become a symbol of balance, wellness, and mindful eating.
It's my absolute favorite things to make for breakfast / brunch!
I like the egg yolk a little runny over the potatoes and I add herbs, salsas, and hot sauces if I'm going for low calorie flavor.
If you want to add some extra power, black beans, avocado, shredded cheese. or non fat greek yogurt are such delicious additions!
Breakfast Buddha Bowl

Serves 1
Ingredients:
1/2 cup potatoes (hash browns)
2 eggs
Peppers, onion, spinach, zucchini (Whatever vegetables you like)
Salsa
Optional additions:
Avocado
Black beans / Refried beans
Non fat greek yogurt
Crumbled vegan bacon
Cheese
Instructions:
Cube and bake potatoes, in airfryer, oven or skillet.
Place in a bowl.
Sauté up some of your favorite veggies.
Cook eggs as desired.
Layer eggs and veggies on top of the potatoes. Add salsa.
Add optional ingredients if desired.
Each serving contains:
